Baked Bacon and Cauliflower Casserole

This was a last minute throw together that turned out sooo yummy.

Ingredients
2 heads of cauliflower
1 package of bacon
1 onion
2 cloves of garlic
1 c of sour cream
2 c shredded cheese


Preheat oven to 350

1.Wash and cut cauliflower into small pieces



2.Steam cauliflower until tender and drain water

3. Fry bacon until crispy and break up into bits

 
4.Chop onions and garlic and sauté in pan lightly
 
5.Layer cauliflower, crumbled bacon, garlic and onion in deep casserole dish

6.Top with sour cream and cheese



Bake covered with tinfoil for 25 minutes, then remove foil and bake until cheese is bubbly and lightly browned. We let this sit for about 15 minutes as there was a bit of water in the bottom.

 It was even better the next day after being in the fridge overnight..Enjoy:)

Crispy Kale Chips

These chips are crisp not crunchy, but delicious and addicting. One pan of kale chips rarely lasts longer than 10 minutes in my house:)

Ingredients
1 bunch of kale
2 tbls olive oil
1tsp kosher salt




Directions
1.Preheat an oven to 350 degrees F (175 degrees C) and  line a cookie sheet with parchment paper.
2.Wash kale and remove kale leafs from the thick stem. Cut into chip size pieces.



3.Lay kale out on paper towel and pat dry
4.In a bowl coat kale with olive oil, I make sure it is all covered by rubbing each piece between fingers.
5.Lay kale out on cookie sheet
6.Bake for 10 minutes or until edges turn light brown



Sprinkle with kosher salt while still hot from the oven and enjoy :)
