Low Carb Shrimp Alfredo With Zoodles



Ingredients:

1 Bag of frozen cooked shrimp
5 Small zucchinis
1 bunch of asparagus
Butter
5 Cloves garlic
2 Cups whipping cream or Heavy cream
Fresh Grated or Shredded Parmesan cheese, aprox 1 Cup
1/2 tsp nutmeg
salt and pepper




Gather All Ingredients



I love this spiral cutter to make my zucchini noodles..
set noodle aside. 


Rinse shrimp in water. 
I also removed tails.


Set cleaned shrimp aside in bowl 


 Chop garlic 



Lightly fry garlic in aprox a tbs of butter
over med heat


Add Cream
 Then slowly add Parmesan 
Nutmeg
Salt and pepper to taste



Add shrimp and simmer for about 5 minutes
Turn stove to low 


In separate pan fry asparagus in 1 tbsp of butter
Set asparagus aside


Fry zucchini noodles just until warm in remaining butter.


Put it all together and ENJOY!!!

Tuna Muffin Puffs


Ingredients:

2 cans of tuna
onion
4 eggs
1/2 cup real mayonnaise
1/2 cup cream cheese
2 cups shredded cheese
Butter
Salt & Pepper


This recipe made 1 1/2 doz muffins




Gather all ingredients, preheat oven to 350


Dice 1/4 of a large yellow onion


Grate 2 cups of cheddar cheese


Combine all ingredients in a large bowl, adding cheese a handful at a time.


Place a "chunk" aprox 1/4 tsp of butter in each muffin tin



Fill muffin tins with mixture
Bake 30 minutes

Italian Parmesan Crusted Pork Chops

Ingredients. 
Pork Chops  ( I am using pork loin chops, 6 of them)
1/2 cup Real Mayonnaise
1/2 cup Parmesan cheese
1 Tbs Italian Seasoning
1/4 cup Ground almond flour
Salt & Pepper



Preheat oven to 350. 



Line deep pan with tinfoil and lightly salt and pepper pork chops




Mix together Mayo, Parmesan and Italian seasoning 



Spread mixture evenly over pork chops

                                           


                                         Sprinkle with almond flour and extra Italian seasoning


                              Bake in Oven 45 min, I did a extra 10 minutes on broil to brown the top 





I served with homemade coleslaw and a lemon wedge. 




Low Carb grilled cheese


Ingredients:
1 Tbs Ground Almond flour
1 Tbs Ground Flax Seeds
1 Tbs Ground Phyllium Seed Husks
Salt and pepper
1 egg
Cheddar cheese
Olive oil





Mix together dry ingredients in a bowl except salt and pepper

                                                         Whisk egg with salt and pepper.



Heat olive oil in frying pan


                                              Cover cheese on both sides with egg mixture


Then cover in dry breading mixture


                                                 Fry for approximately 3 minutes per side.

                                 

Had this for breakfast this morning and it really did have the taste of bread and cheese, super satisfying when missing the bread. Enjoy :)
